Spaghetti Sauce

Ingredients
1 large onion, chopped
2 tsp garlic, minced or pressed
Olive oil
2 28-oz. cans crushed tomatoes*
16 oz. tomato sauce (or 8 oz tomato paste)
1-2 Tbsp. sugar (to taste)
2 tsp. basil
1 tsp oregano
1 tsp. Italian seasoning
1-2 drops of Tabasco sauce
Salt and pepper to taste
Pinch of baking soda (to help neutralize the acid)
Optional: Sliced mushrooms, diced olives, chopped spinach, chopped bell peppers

Heat olive oil in a large skillet. Add onion and garlic and cook until onions are translucent and garlic is fragrant. Add remaining sauce ingredients and combine well. Bring to a simmer on low, uncovered, until desired consistency is reached–about 25-30 minutes for a sauce that’s of medium consistency.  Serve over hot spaghetti noodles or use as tomato base for lasagna, etc...
Recipe adapted from: http://www.ourbestbites.com/2009/04/spaghetti-and-meatballs/ (only the sauce)
*Can substitute whole, peeled tomatoes pureed in blender
