1 onion, diced
1 T olive oil
1 tsp garam masala
4 tomatoes, skinned and chopped (or one can chopped tomatoes)
1 C (200 g) red lentils
1/4 tsp turmeric powder

1 cube vegetable stock
1 tsp coriander

Saute chopped onion and garlic in margarine until golden.
Add garam masala and saute a further 2 minutes.
Add tomatoes and let cook 1-2 min before adding lentils, turmeric, cumin, potatoes, carrots, water, and vegetable stock.
Simmer until potatoes are cooked, remove from heat and add coriander. If a smooth texture desired, pour mixture into blender and mix until smooth. Keep covered until ready to serve.
